Italian Sausage and Peppers

Italian Sausage and Peppers is an Italian comfort food and is the “national” dish of the Italian-American immigrants from Italy (especially Southern Italy) who made their home here in the “New World". Surprisingly, Sausage and Peppers is not an authentic Italian dish. It was actually invented in New York City and is a common dish at the Feast of San Gennaro, where it was first served back in 1927.

Sausage and Peppers is a simple dish to prepare and takes about 30 minutes. Grilled, broiled or pan-fried Italian sausages with sautéed peppers and onions, tomatoes (fresh, sauce or paste) and spices.

Ingredients
1 coil or 8-10 links of Italian Sausage
1 red bell pepper
1 green bell pepper
1 yellow bell pepper
1 large white onion
1 Tbsp dried oregano
1 Tbsp dried basil
1 Tsp sea salt
1 Tsp black pepper
1/8 cup red wine
Optional - 1 Tbsp tomato paste OR 1/2 cup tomato sauce OR 1 diced tomato
Instructions
Slice the onion and bell peppers into thin strips
Grill, broil or pan fry the sausage until it's browned evenly and set aside
In a deep skillet, add 1 Tbsp olive oil and cook onions until they start to brown
Add peppers and cook until tender
Slice cooked sausage and add to skillet
Add optional tomato paste, sauce or diced tomato
Add Salt, pepper, oregano, basil and wine
Cover and cook for an additional 5 to 10 minutes allowing all the flavors to blend together
Serve hot over a fresh sweet bread roll
