Pizza Dough





Makes 4 250 gram dough balls.


Ingredients:

1 Yeast Packet (7 grams)

18 grams of salt

613 grams of 00 (Double Zero / Dopio Zero) flour

368 grams lukewarm water




Directions:

In extra small mixing bowl, mix yeast with enough warm (NOT HOT) water to cover the yeast completely


Stir until yeast is fully dissolved in water, let sit for 10 minutes to let yeast activate


In mixer, combine flour, salt, water and yeast mixture


Run mixer on low until dough forms a ball (about 2 minutes)


Put dough ball into a covered bowl, let sit in warm area of kitchen for 2 hours (Dough should double in size)


Remove dough, cut into 4 even pieces, roll out on cutting board dusted with Semolina Flour or Cornmeal to prevent the dough from sticking


Roll or hand form into pizza rounds, top with your favorite sauce / toppings, use a pizza peel to move the pizza in / out of the oven.
