Ratatouille

Ratatouille is a traditional French dish that originated in the region of Provence. It is a flavorful vegetable stew that typically includes ingredients like eggplant, zucchini, bell peppers, onions, garlic, and tomatoes. While the exact origin of ratatouille is a subject of debate, it has a rich culinary history that dates back several centuries. Today, ratatouille is a beloved and iconic dish in French cuisine. It is appreciated for its rustic simplicity, use of fresh ingredients, and delicious Mediterranean flavors. While it retains its traditional charm, modern chefs and home cooks often put their own twists on the recipe, adapting it to contemporary tastes and culinary trends.

Ingredients:

1 large Eggplant

2 Bell Peppers

2 large Zucchini

1 medium white onion

2 tomatoes

3 cloves minced garlic

2 tsp fresh chopped thyme

3 tsp fresh chopped basil

1 Tbsp tomato paste

1/2 tsp sugar

6 tsp olive oil

Salt

Pepper



Directions:

Dice all the vegetables

Fry the diced eggplant until tender and brown, set aside

Fry the onion and garlic until slightly brown, add diced bell peppers

Cook onion / garlic / bell pepper mixture until the bell peppers become tender

Add diced tomatoes and sugar, cook an additional 5 minutes, set aside

Fry the zucchini until tender and brown

Now combine all the cooked vegetables, add chopped basil, thyme and tomato paste

Salt and pepper to taste, cook an additional 10 minutes

Serve hot with a basil garnish
