Ingredients:
1 large Eggplant
2 Bell Peppers
2 large Zucchini
1 medium white onion
2 tomatoes
3 cloves minced garlic
2 tsp fresh chopped thyme
3 tsp fresh chopped basil
1 Tbsp tomato paste
1/2 tsp sugar
6 tsp olive oil
Salt
Pepper
Directions:
Dice all the vegetables
Fry the diced eggplant until tender and brown, set aside
Fry the onion and garlic until slightly brown, add diced bell peppers
Cook onion / garlic / bell pepper mixture until the bell peppers become tender
Add diced tomatoes and sugar, cook an additional 5 minutes, set aside
Fry the zucchini until tender and brown
Now combine all the cooked vegetables, add chopped basil, thyme and tomato paste
Salt and pepper to taste, cook an additional 10 minutes
Serve hot with a basil garnish
